Having learned so much about Seoul’s most stylish bakery, you are likely wondering about the person and their motives behind opening it. The concept behind the London Bagel Museum (LBM) is actually pretty simple. The bakery wasn’t born out of carefully planned strategy or with a long-term vision; it was the result of one particular person’s preferences. That person is the London Bagel Museum owner and creative director, Lee Hyo Jung, who also goes by Ryo. She is also the founder of renowned cafes, such as High West, Artist Bakery, and Layered.

The 50+ year-old businesswoman is known for her age-defying looks and youthful appearance. She visualized everything that has led the London Bagel Museum to be one of the hottest cafes in Seoul. Ryo planned the cafe’s vintage and cozy interiors, menus, and aesthetics based on her personal preferences. Surprisingly, her tastes resonated with many Seoul residents who quickly flocked to the bakery and made it a hotspot in no time.

I didn’t create London Bagel Museum with a strategy in mind. I wasn’t chasing trends or carefully planning something. It was just me.

Since its launch in 2021 in Anguk-dong, Jongno, the London Bagel Museum has opened several branches outside Seoul. Its sales have increased dramatically, with LBM reporting revenue of 79.6 billion won in 2024. The latest news reveals that JKL Partners is set to buy this nationally famous bakery for around 200 billion won.

The craze of the London Bagel Museum is so insane that they are even planning an overseas expansion into Japan and Singapore. Don’t take my words for it and try this bakery’s soft, chewy bagels if you are in Seoul, Hongdae, or Jeju. You have to experience these bagels firsthand to know why locals keep coming back for more.
